  • From thawed: Salt roast and let set out at room temperature for approximately 30:00 minutes. Preheat your oven to 500°F. Pat the roast dry with paper towels and then season with salt and pepper all over. Place the roast fat side up in a roasting pan. Insert a meat thermometer (oven proof) into the thickest part of the roast. Cook the roast at 500°F in the oven for 15:00 minutes, then lower oven temp to 325°F to finish roasting. Cook about 33:00 minutes for rare (internal temperature reaches 115°F) and 42 minutes for medium rare (internal temperature reaches 125°F). Once the roast has reached the temperature you want, remove it from the oven and place it on a carving board. Cover it with foil and let it rest for 15:00 to 30:00 minutes before carving.
